The ideal candidate must possess:

  • At minimum of 3 years of current Kitchen Manager experience in a high volume, full service restaurant or entertainment center
  • Bachelor’s Degree in HRM or Culinary preferred
  • Extremely hands on work ethic
  • The ability to attract, develop, and retain top hourly talent
  • High level of business acumen and common sense
  • Computer knowledge (Excel, Windows, POS, etc.)
  • Must possess strong communication skills, excellent speaking, reading and writing
  • Bi-lingual is a plus, but not necessary

 

The Kitchen Manager responsibilities:

  • Maintain full responsibility for financial performance directly impacting the kitchen
  • Ensure that all food and products are consistently prepared and served according to the recipes, portioning, cooking and serving standards
  • Responsible for ordering food products according to predetermined product specifications and received in correct unit count and condition and deliveries are received
  • Control food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures including checking and maintaining proper food holding and refrigeration temperature control points
  • Ensure that all equipment is kept clean and kept in excellent working condition through personal inspection and by following the preventative maintenance programs
  • Identify where improvements may be made and how those changes should be implemented
  • Schedule labor as required by anticipated business activity while ensuring that all positions are staffed when and as needed
